Chicken with Orzo and Asparagus
Ingredients
4 Boneless chicken breasts
1 teaspoon of Ground garlic
1 teaspoon of Chopped thyme
1 teaspoon of Lemon zest
1 pound of Orzo pasta
½ cup of Olive oil
2 tablespoons of Ground garlic
½ cup of Chopped basil
1 tablespoon of Chopped parsley
2 cups of Sliced asparagus
1 tablespoon of Whole milk
1 tablespoon of Skim milk
2 tablespoons of Parmesan cheese
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Season the chicken breasts with salt, pepper, ground garlic, chopped thyme, lemon zest, and a little olive oil.
Step 2 : Sear them in a hot skillet and cook over medium-low heat for 7 to 10 minutes.
Step 3 : Set aside.
Step 4 : In a pot, bring water to a boil and cook the orzo for 8 minutes or until al dente.
Step 5 : Drain quickly and rinse under cold water.
Step 6 : Drain again and set aside.
Step 7 : In a saucepan, lightly sauté the ground garlic, basil, and sliced asparagus.
Step 8 : Add a pinch of salt and cook for 5 minutes.
Step 9 : Add the whole milk and skim milk, cooking for 1 minute.
Step 10 : Then add the orzo and remaining olive oil, mix, and add the Parmesan cheese.
Step 11 : Season with salt and pepper to taste.
Step 12 : Serve the orzo with the chicken breasts and can be garnished with more lemon.
