Ingredients

12 Flour tortillas

¼ cup of Parmesan cheese

2 cups of Chopped lettuce

1 cup of Cooked and shredded chicken breast

½ cup of Chopped tomato

½ cup of Chopped green chili

1 tablespoon of Chopped cilantro

½ cup of Chicken broth

¼ cup of Pineapple juice

1 Avocado

2 tablespoons of Cream

2 tablespoons of Pear nectar

1 tablespoon of Mayonnaise

1 tablespoon of Lemon juice

½ cup of Orange juice

½ cup of Tomato paste

1 tablespoon of Sugar

½ cup of Chopped red onion

½ cup of Chopped tomato

1 tablespoon of Chopped cilantro

2 Lemons

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a pan, lightly sauté the tomato and green chili, then add the chicken, chopped cilantro, pineapple juice, and chicken broth. Season with salt and pepper to taste and cook for 10 minutes.

Step 2 : Combine all the ingredients for the avocado sauce in a blender and process until fully integrated.

Step 3 : In a pot, mix all the ingredients for the red sauce and cook over medium heat until boiling; once ready, set aside to rest.

Step 4 : Mix all the ingredients for the chimol and season with lime juice, salt, pepper, and cumin to taste.

Step 5 : Fill each flour tortilla with chicken, roll them up, and secure with 2 toothpicks. Once all the taquitos are assembled, fry them in plenty of oil.

Step 6 : Place a bed of lettuce on a plate, add the tacos, top with red sauce and Parmesan cheese, and serve with avocado sauce and chimol.
