Ingredients

2 ½ pounds of Maseca corn flour

1 ½ cup of Lard

1 Large onion

1 Large green chili pepper

½ Cilantro bunch

3 Garlic cloves or to taste

Water

2 pounds of Chicken meat

½ pound of Prepared dough

1 Large tomato

1 Large onion

5 Garlic cloves

2 Large sweet green chilis

2 teaspoons teaspoons of Achiote for coloring

2 cups of Cooked rice

2 cups of Stuffed olives

3 Large potatoes, diced

1 can of Peas

½ cup of Chickpeas

1 cup of Optional raisins

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Start by blending the garlic, onion, sweet chili, and cilantro with a little water.

Step 2 : Then, dissolve the lard in a pan and remove from heat.

Step 3 : In a large pot, dissolve the corn flour with water, salt, pepper, and the blended mixture prepared earlier.

Step 4 : Cook, adding the melted lard until a smooth dough forms.

Step 5 : Next, prepare the chicken by seasoning and cooking it with the spices.

Step 6 : Make the Recado with white dough, achiote, and meat juice.

Step 7 : Prepare the ingredients to fill the nacatamales and wrap them in banana leaves, tying them.

Step 8 : Steam the nacatamales for 30 to 45 minutes.

Step 9 : Finally, serve and enjoy with family.
