Cazuela olanchana

Ingredients

1 pound of Pork ribs

1 pinch of Salt

½ pound of Peeled yucca

2 Large potatoes

1 Carrot

½ Cabbage

5 Red tomatoes

1 Pataste

1 Green pepper

1 Onion

2 Garlic cloves

1 tablespoon of Oil

3 cups of Water

2 Bay leaves

1 tablespoon of Chicken broth

1 tablespoon of Ground oregano

1 teaspoon of Ground cumin

3 Ripe plantains

Oil for frying

1 teaspoon of Sugar

¼ cup of Chopped cilantro

1 pinch of Pepper

Preparation

Step 1 : Cut the ribs into small pieces and season with salt and pepper to taste.

Step 2 : Set aside.

Step 3 : Dice the yucca, potatoes, carrot, cabbage, tomatoes, and pataste, and set aside.

Step 4 : In a large skillet with oil, sauté the finely chopped onion, pepper, and garlic for about 5 minutes.

Step 5 : Add the ribs to the skillet and sear on all sides.

Step 6 : Add water, bay leaves, seasonings, cover, and cook over medium-low heat for 30 minutes.

Step 7 : While everything is cooking, peel the plantains, dice them, and fry them in enough oil in a skillet.

Step 8 : Let them drain on absorbent paper.

Step 9 : Once the ribs and vegetables are cooked, add the fried plantains to the skillet along with sugar and cilantro.

Step 10 : Stir and cook on low heat for 5 minutes.

Step 11 : Taste and adjust seasoning if necessary, remove from heat, and serve.
