Ingredients
1 kilogram of Beans
1 ½ cup of Rice
½ Onion
1 Chile pepper
1 Bell pepper
3 Garlic cloves
2 tablespoons of Oil
½ liter of Coconut milk
1 teaspoon of Cumin powder
1 teaspoon of Paprika
1 pinch of Salt
1 pinch of Black pepper
Preparation
Step 1 : The beans are rinsed and soaked in a container with water for about 3 hours.
Step 2 : Then they are cooked in a pot with water for approximately 1 hour and 20 minutes until tender.
Step 3 : After that, they are removed from the heat to rest.
Step 4 : One and a half cups of beans and 2 cups of bean broth are reserved.
Step 5 : Finely chop the onion, Chile pepper, bell pepper, and garlic.
Step 6 : In a skillet with oil, sauté the onion and Chile pepper for 2 minutes, then add the garlic and sauté for another minute.
Step 7 : Add the rice and beans to the skillet to sauté a bit and mix with the vegetable juices.
Step 8 : Then add the broth along with the coconut milk, cumin, paprika, salt, and pepper to taste.
Step 9 : Let it cook over medium heat for 15 minutes.
Step 10 : When the broth has reduced, lower the heat, cover, and cook for another 15 minutes or until the rice is fully cooked.
Step 11 : Finally, turn off the heat and serve.
