Today, we bring you a delicious recipe for beef tongue in adobo. This dish is easy to prepare, budget-friendly, and very filling. The adobo enhances the flavor of the meat in an unmatched way.
The beef tongue, slowly cooked and seasoned with spices, reflects the influence of indigenous and Spanish cultures on the country's cuisine.
Beef Tongue in Adobo
Ingredients
1 Beef tongue
¼ Onion
2 Crushed garlic cloves
3 Bay leaves
2 tablespoons of Oil
2 cups of Julienned onion
Seasoning blend
6 Guajillo chiles
1 Pasilla chile
2 cups of Water
1 tablespoon of Annatto (achiote)
½ tablespoon of Paprika
¼ Onion
2 Crushed garlic cloves
1 teaspoon of Ground cumin
1 teaspoon of Chicken broth
½ tablespoon of Oregano (ground)
2 Cloves
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Rinse the beef tongue and place it in a large pot with plenty of water, adding salt, pepper to taste, ¼ onion, garlic, and bay leaves.
Step 2 : Let it cook covered for about 2 hours or until the tongue is tender.
Step 3 : Once tender, remove from heat, drain, and remove the skin. Slice it to the desired thickness.
Step 4 : To make the marinade, wash the chiles, remove their seeds, chop them, and place them in a hot skillet with two tablespoons of oil to sauté for 1 minute.
Step 5 : Then add two cups of water and the remaining marinade ingredients, cover, and cook over medium heat for 5 minutes.
Step 6 : Remove from heat, allow to cool slightly, and blend everything in a blender until smooth.
Step 7 : The marinade should be a bit thick; set aside.
Step 8 : In a large skillet, heat oil and sear the slices of tongue for 1 minute on each side or until golden, then remove.
Step 9 : Add a little more oil if needed, then sauté julienned onion for about 2 minutes or until it starts to change color.
Step 10 : Add the prepared marinade, the slices of tongue, and stir to coat everything evenly.
Step 11 : Let cook covered over medium-low heat for 5 minutes.
Step 12 : Finally, turn off the heat and let it rest before serving with white rice.
