Ingredients

1 pound of Beef Tajo

2 pounds of Beef ribs with bones

2 cups of Chopped onion

½ cup of Chopped celery

2 Chopped red morrón peppers

6 Chopped garlic cloves

1 Sprig of thyme

½ cup of Chopped cilantro

2 pounds of Cubed potato

1 pound of Cubed yucca

½ pound of Cubed pataste

½ pound of Cubed carrot

3 Sliced corn on the cob

1 Sliced green plantain

1 cup of Cream cheese cubes

½ cup of Tamarind juice

Lizano sauce

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a large pot with boiling water, place the meat along with the onion, celery, red morrón, tamarind juice, garlic, cumin, thyme, and cilantro (reserving some for serving).

Step 2 : Season with salt and pepper and cook for 2 to 3 hours on low heat until the meat is tender.

Step 3 : During cooking, remove any fat that collects on the surface with a spoon.

Step 4 : After 2 hours of cooking, add the yucca and corn, and with half an hour remaining, add the pataste, carrot, plantain, and potato.

Step 5 : If necessary, add more water so that the liquid always covers the meat and vegetables.

Step 6 : To serve, accompany with white rice, cream cheese, fresh cilantro, and Lizano sauce.
