Ingredients

5 pounds of Beef loin

2 tablespoons of Ground garlic

¼ cup of Pear nectar

½ cup of Apple nectar

½ cup of Orange juice

2 tablespoons of Yellow butter

1 Rosemary sprig

1 Thyme sprig

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Place the beef loin in a tray and marinate it with all the ingredients, then refrigerate for 1 or 2 hours.

Step 2 : Remove the meat from the marinade and sear it whole on all sides in a large skillet with Yellow Butter and vegetable oil.

Step 3 : Preheat the oven to 375°F.

Step 4 : Bake the meat for approximately 20 minutes, checking with a thermometer that the internal temperature reaches 150°F for medium doneness.

Step 5 : If you prefer it more cooked, leave it to cook for 30 to 40 minutes.

Step 6 : Once cooked, remove the meat from the oven and let it rest for 10 minutes before slicing and serving.
