Ingredients

6 Ripe plantains

1 ½ pound of Ground beef

½ cup of Diced onion

2 Crushed garlic cloves

½ cup of Diced tomato

½ cup of Green chile

½ teaspoon of Achiote powder

1 pinch of Salt

1 Bay leaf

Aluminum foil

Mozzarella cheese

1 Margarine stick

1 pinch of Black pepper

Preparation

Step 1 : Start by placing the onion, chile, and tomato portions into a blender, then blend the mixture until a uniform consistency is achieved.

Step 2 : Next, place the beef in a pot and season with salt, pepper, and achiote, also adding the previously blended mixture.

Step 3 : Mix well and add water and margarine, allowing the mixture to cook for 25 minutes.

Step 4 : Meanwhile, in a skillet with a little oil, sauté the ground beef, incorporating bay leaves and cooking for 15 minutes, removing the leaves at the end.

Step 5 : Then, place the unpeeled plantains on a baking tray, make a small slit along each one, and stuff them with the meat.

Step 6 : Add a layer of mozzarella cheese over each stuffed plantain and cover everything with aluminum foil.

Step 7 : Finally, place the tray in a preheated oven at 170°C and bake for 15 minutes.
