Ingredients

1 Chicken

1 Stick of yellow butter

2 tablespoons of Chopped rosemary

2 tablespoons of Chopped parsley

2 tablespoons of Chopped thyme

2 tablespoons of Ground garlic

1 cup of Peach nectar

½ cup of Orange juice

2 tablespoons of Dark soy sauce

4 Medium-sized whole potatoes

1 Bunch of scallions

4 Whole tomatoes

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : The chicken is seasoned on both halves with salt, pepper, cumin, yellow butter, rosemary, parsley, thyme, and ground garlic.

Step 2 : Add soy sauce, peach nectar, and orange juice, then marinate for one hour before placing it on a baking sheet along with the potatoes wrapped in aluminum foil.

Step 3 : Bake at 350°F for one hour.

Step 4 : After the first hour, add the tomatoes and scallions to the tray and bake for an additional 15 minutes.

Step 5 : When serving, present each portion accompanied by potatoes, tomato, and scallion.
