Pinol Tortejas
Ingredients
3 tablespoons of Pinol
3 Eggs
1 Panela
2 cups of Water
5 Cinnamon sticks
5 Cloves
½ liter of Olive oil
1 liter of Water
Preparation
Step 1 : To prepare this dish, start by grinding the toasted corn, toasted cocoa, and cinnamon until you obtain a fine powder texture.
Step 2 : Next, beat the egg whites until stiff peaks form, then incorporate the yolks, beating constantly.
Step 3 : Then, gradually add the tablespoons of pinol, ensuring the mixture has a pancake-like consistency.
Step 4 : Heat oil in a deep skillet and pour the mixture in small portions into the skillet.
Step 5 : Fry the pancakes on both sides until golden, then immerse them in boiling water to remove excess oil.
Step 6 : Drain and press them to remove excess water, then submerge them in the prepared honey and cook for 20-30 minutes.
Step 7 : Finally, let the tortejas cool and then refrigerate before serving.
