Unlike other fruit candies, papaya sweet requires that it be made with green papayas. It is a sweet that can be prepared any time of the year, but is mainly associated with December festivities.
Honduran papaya sweet has its roots in the country's culinary tradition, where the goal is to make the most of local ingredients.
This sweet is prepared with green papayas and is especially popular during Christmas celebrations.
Papaya Sweet
Ingredients
4 cups of Peeled and diced green papayas
1 cup of Rapadura sweet
2 cups of White sugar
7 cups of Water
6 Cinnamon sticks
Preparation
Step 1 : In a pot, add 4 cups of water and the 4 cups of diced papaya and bring to a boil.
Step 2 : Remove the water, rinse the papayas again, add 2 cups of water, and let boil for about 20 minutes.
Step 3 : Strain and let the papayas drain.
Step 4 : In another pot, combine the cup of rapadura, the 2 cups of sugar, 3 cups of water, and the cinnamon sticks, boiling over low heat for about 30 minutes or until the mixture thickens.
Step 5 : Once the mixture has thickened, add the papayas and cook over low heat for about 20 minutes.
Step 6 : And voila!
