Coconut Pancakes
Ingredients
1 Egg
1 cup of All-purpose flour
1 teaspoon of Baking powder
1 cup of Whole milk
8 tablespoons of Desiccated coconut
1 ½ tablespoon of Yellow butter
1 ½ cup of Milkshake of your preference
½ cup of Sugar
3 tablespoons of Yellow butter
Preparation
Step 1 : To prepare the pancakes, it is recommended to start by beating the egg with the Whole milk and the melted Yellow butter.
Step 2 : Next, sift the flour, baking powder, and desiccated coconut into the mixture; beat until smooth and set aside.
Step 3 : On a non-stick griddle or skillet, pour approximately 1/4 cup of the prepared mixture.
Step 4 : Cook the pancakes until golden and cooked through on both sides.
Step 5 : For the milkshake, in a small saucepan, combine the Milkshake and sugar.
Step 6 : Stir constantly over medium heat until steam starts to rise.
Step 7 : Then, reduce the heat and let the mixture reduce to about half.
Step 8 : Finally, add the yellow butter, whisk well, and let it cool before spreading over the pancakes.
