A delicious and simple recipe to prepare a marbled chocolate sponge cake with malt, topped with an irresistible chocolate glaze.
Chocolate Marquesote
Ingredients
2 cups of Flour
1 cup of White sugar
5 Eggs
1 teaspoon of Baking powder
1 tablespoon of Orange juice
1 tablespoon of Apple juice
5 tablespoons of Cocoa
¼ cup of Malted drink
2 tablespoons of Yellow butter
2 cups of Chocolate glaze
Preparation
Step 1 : Grease a 25 cm diameter mold with Yellow Butter.
Step 2 : Preheat the oven to 350°F.
Step 3 : Separate the egg whites from the yolks.
Step 4 : Beat the egg whites until stiff peaks form and add half of the sugar, beating until stiff peaks are achieved.
Step 5 : In another bowl, beat the remaining sugar with the yolks and add the Orange juice, beating until well combined.
Step 6 : Gradually incorporate the flour into the yolk mixture and mix well.
Step 7 : Add the whipped egg whites to the mixture with gentle folding.
Step 8 : Divide the batter into two parts, mixing one part with cocoa and the malted drink.
Step 9 : Pour both batters into the mold alternately to create a marbled effect.
Step 10 : Bake the cake for 30 minutes and check doneness with a toothpick.
Step 11 : Once done, unmold and let cool on a wire rack.
Step 12 : For the chocolate glaze, melt the chocolate glaze and Yellow Butter in a double boiler.
Step 13 : Let it cool slightly and coat the cake.
