Ingredients

2 cups of Flour

2 tablespoons of Baking powder

1 tablespoon of Baking soda

1 tablespoon of Ground cinnamon

½ tablespoon of Salt

3 cups of Grated carrots

cup of Brown sugar

cup of Oil

¼ cup of Orange and carrot juice

4 Eggs

½ cup of Raisins and walnut pieces

½ cup of Yellow butter

¾ cup of Cream cheese

2 cups of Confectioners' sugar

1 tablespoon of Vanilla

Preparation

Step 1 : To prepare this delicious carrot cake, preheat the oven to 325°F and grease a 9-inch cake pan.

Step 2 : In a large bowl, sift together the flour, baking powder, baking soda, cinnamon, and salt, then mix with the grated carrots.

Step 3 : In a separate container, beat the brown sugar, oil, orange and carrot juice, and eggs, then add this mixture to the carrot mixture and stir well.

Step 4 : Incorporate the raisins or walnuts.

Step 5 : Pour the resulting mixture into the prepared pan and bake for 40 to 50 minutes, or until a knife inserted comes out clean.

Step 6 : Once baked, let the cake cool for 20 minutes in the pan.

Step 7 : While the cake cools, beat the cream cheese and yellow butter for 3 minutes or until fluffy.

Step 8 : Then add the confectioners' sugar and vanilla, mixing gently until a fluffy glaze forms.

Step 9 : Cut the cake horizontally in half and place one layer on a plate.

Step 10 : Spread one cup of frosting over this layer and cover with the second cake layer.

Step 11 : Distribute the remaining frosting on the top and sides of the cake.

Step 12 : Finally, you can decorate the edge of the cake with walnuts if desired, and it is recommended to store the cake refrigerated.
