Candied Truffles
Ingredients
1 cup of Skinless orange segments
½ cup of Sugar
½ cup of Orange juice
1 ½ cup of Semi-dark chocolate couverture
3 ounces of Yellow butter
5 ounces of Sweet cream
Preparation
Step 1 : In a skillet, heat the orange juice, sugar, and yellow butter until the sugar dissolves completely and is well incorporated with the butter.
Step 2 : Then, add the orange segments and ensure they are coated with the mixture.
Step 3 : Cook everything for 5 minutes and then transfer to an oven-safe tray.
Step 4 : Next, bake at 250°F for 15 minutes, then let cool.
Step 5 : After cooling, break the chocolate couverture into pieces.
Step 6 : Heat the sweet cream without boiling and quickly add to the chocolate along with the yellow butter.
Step 7 : Mix everything until well combined and refrigerate to set.
Step 8 : Finally, form small spheres with the chocolate mixture and coat each sphere with the candied oranges.
