Tamales Pisques
Ingredients
4 cups of Corn flour
2 cups of Water
2 tablespoons of Chicken broth
6 tablespoons of Melted pig fat
1 ½ pound of Cooked beans
1 Chopped onion
2 tablespoons of Oil
1 pinch of Salt
12 Banana leaves
1 tablespoon of Lime
1 tablespoon of Ash
Aluminum foil
1 pinch of Pepper
Preparation
Step 1 : Place the beans in a blender with the onion and process until you get a smooth mixture.
Step 2 : In a pot, heat the oil and add the beans, cooking while stirring constantly until all the liquid evaporates and they reach a smooth consistency.
Step 3 : Remove from heat and set aside.
Step 4 : Sieve the lime and ash, dissolve in 50 ml of water.
Step 5 : In a container, place the flour, add salt, the lime and ash water, the two cups of water, and knead until you get a lump-free dough.
Step 6 : Add the broth, the fat, and mix until achieving a smooth, homogeneous texture.
Step 7 : To assemble the tamales, place a piece of aluminum foil on a table and on top of it a banana leaf.
Step 8 : Take a medium portion of dough, flatten it on the leaf, add some beans, wrap by folding and turn the ends inward.
Step 9 : Repeat the process with the rest of the dough.
Step 10 : In a pot, place 4 to 5 layers of leaves at the bottom and add enough water to just cover them.
Step 11 : Place the tamales one by one in the pot, cover with banana leaves on top, and cover the pot.
Step 12 : Cook over medium-high heat for 1 hour and 30 minutes.
Step 13 : At the end of the cooking time, remove the tamales and let them drain in a colander.
Step 14 : Ready to serve fresh!
