Ingredients

120 grams of Cooked brown rice

4 Variety peppers

200 grams of Tuna, drained and shredded

325 grams of Sweet corn, drained

100 grams of Grated cheddar cheese

1 Small bunch of basil leaves cut into strips

2 tablespoons of Breadcrumbs

1 tablespoon of Grated parmesan cheese

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Cut the peppers in half and remove the seeds and stems.

Step 2 : Then, heat the grill or barbecue and place the peppers cut side down, roasting them for about 5 minutes.

Step 3 : Turn them over and continue roasting for another 5 minutes.

Step 4 : In a large bowl, place the cooked rice and add the shredded tuna, drained corn, grated cheddar cheese, and sliced basil, seasoning to taste.

Step 5 : Divide this mixture into 8 portions and use them to fill the pepper halves.

Step 6 : Mix the breadcrumbs with the grated Parmesan and sprinkle this mixture over the stuffed peppers.

Step 7 : Return the peppers to the grill or place them in a preheated oven at 200°C until they are hot and golden.

Step 8 : Finally, serve the stuffed peppers immediately.
