Snapper Ceviche
Ingredients
1 pound of Snapper fillet
1 cup of Julienned red onion
½ cup of Cherry tomatoes
¼ cup of Cilantro leaves
½ cup of Fresh lime juice
3 Garlic cloves
½ cup of Cilantro
½ cup of Olive oil
½ pound of Cream cheese
Parmesan cheese
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a blender, combine the cilantro (stems and leaves), olive oil, cream cheese, and garlic cloves.
Step 2 : Blend the mixture until well integrated and add a bit of lime juice.
Step 3 : Blend again to incorporate everything and taste for seasoning, adjusting with salt and pepper as desired.
Step 4 : Set this mixture aside in the refrigerator.
Step 5 : Cut the cleaned snapper fillet into medium cubes and place in a bowl.
Step 6 : Add the onion, tomatoes, cilantro leaves, and a pinch of salt.
Step 7 : Mix everything and incorporate lime juice, tasting and adding more salt if necessary.
Step 8 : To serve, place the ceviche on a plate accompanied by the pesto sauce and Parmesan cheese.
