Shrimp Rellenitos are a delicious and original option to share at gatherings or as a special appetizer.
With shrimp, grated cheese, onion, tomato, green chili, and a touch of lemon, this simple dish will leave everyone wanting more.
Shrimp Rellenitos
Ingredients
12 Bread rolls
½ cup of Shredded quesillo cheese
½ pound of Clean shrimp
2 tablespoons of Chopped yellow onion
2 tablespoons of Chopped tomato
2 tablespoons of Chopped green chili
1 tablepoon of Chopped cilantro
Juice of one fresh lemon
2 tablespoons of Cream
1 tablespoon of Orange juice
3 tablespoons of Mayonnaise
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Open the bread rolls in the center without dividing them completely.
Step 2 : Cook the shrimp in a pot with boiling water and a pinch of salt for a maximum of 1 minute.
Step 3 : Then, remove from the heat and quickly cool in ice water, drain, and chop.
Step 4 : To prepare the filling, place the chopped shrimp in a bowl along with onion, tomato, green chili, and cilantro.
Step 5 : Add fresh lemon juice, Cream, Orange juice, and mayonnaise, mixing well until integrated.
Step 6 : Season to taste with salt and pepper.
Step 7 : Next, fill the bread rolls with the prepared mixture and place the quesillo cheese on top.
Step 8 : Bake in a preheated oven at 350°F for about 5 minutes to melt the cheese.
Step 9 : Once ready, serve and enjoy.
