Ingredients

1 pound of Ripe tomatoes cut into small cubes

4 Minced garlic cloves

1 Small red onion sliced thinly

1 ½ cup of Water

1 teaspoon of Sugar

2 tablespoons of Oil

2 teaspoons of Salt

2 tablespoons of Parsley

2 tablespoons of Basil

2 tablespoons of Oregano

½ cup of Sherry wine

1 Bay leaf

1 pinch of Pepper

Preparation

Step 1 : In a skillet, heat the oil and sauté the onion until caramelized and soft.

Step 2 : Add the garlic and sauté for about 2 minutes.

Step 3 : Then add the other ingredients, cover, and simmer over low heat for 20 to 30 minutes, or until the sauce thickens.

Step 4 : Before serving, remove the bay leaf.
