This delicious potato salad is a very nutritious dish, in addition to being the perfect side for Christmas celebrations.
Potato Salad
Ingredients
2 pounds of Potatoes
2 liters of Water
1 White onion
1 can of Corn
1 Cilantro bunch
1 Parsley bunch
1 Mayonnaise packet
1 Garlic clove
Spices to taste
¼ Ham
2 Bacon strips
3 Eggs
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : To prepare the Honduran-style Christmas potato salad, start by washing and peeling the potatoes.
Step 2 : Then, cut them into medium square pieces and place them in a pot with 2 liters of water.
Step 3 : Bring the pot to the stove and add salt, boiling for 25 minutes.
Step 4 : Once the time has passed, turn off the heat, let it cool, and discard the cooking water.
Step 5 : Place the cooked potatoes in a glass or plastic container.
Step 6 : Next, chop the onion, cilantro, parsley, and garlic clove, adding them to the container with the potatoes.
Step 7 : Season with spices, salt, and pepper, then add mayonnaise and mix well.
Step 8 : Gradually add the corn.
Step 9 : In a separate pot, cook the 3 eggs, and in a skillet without oil, fry the chopped bacon and ham into small cubes.
Step 10 : In a large bowl, combine all the ingredients from the previous step, along with the eggs cut into small pieces, making sure everything is well coated with mayonnaise and correctly mixed with the potatoes.
Step 11 : Let it cool slightly, and the salad will be ready to serve and enjoy during these Christmas festivities.
