Ingredients

3 cups of Sweet corn kernels

½ cup of Corn flour

1 cup of Chopped onion

2 tablespoons of Ground garlic

1 cup of Chopped chili morron

3 cups of Chicken broth

4 tablespoons of Yellow butter

¼ cup of Parmesan cheese

2 pounds of Pork leg

1 tablespoon of Ground garlic

1 tablespoon of Paprika

½ cup of Apple juice

¼ cup of Pear nectar

½ cup of Licuado chile morron

3 tablespoons of Chopped chili morron

3 tablespoons of Fresh peas

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a pot, sauté onion, garlic, chili morron, and Yellow Butter over medium heat for 10 minutes.

Step 2 : Blend the sweet corn kernels with 1 cup of chicken broth and add to the sauté, along with corn flour and the remaining 2 cups of chicken broth.

Step 3 : Cook over low heat for 25 to 30 minutes until you obtain a thick, smooth purée, then add Parmesan cheese and season with salt, pepper, and cumin to taste.

Step 4 : For the filling, cut the pork leg into large cubes, season with salt, pepper, cumin, and paprika, and sear in a high-temperature skillet until golden.

Step 5 : Add ground garlic, liquefied chili morron, apple juice, pear nectar, and 2 cups of water.

Step 6 : Cover and cook for 2 hours over low heat, adding chopped chili morron and fresh peas at the end, cooking for another 10 minutes.

Step 7 : Serve the tamale in a bowl and top with the pork filling.
