Pork Crackling Pupusas
Ingredients
1 kilogram of Chicharrón
4 cups of Warm water
4 cups of Corn flour
1 ½ tablespoon of Salt
180 grams of Shredded mozzarella cheese
1 Onion
1 Chili pepper
2 Garlic cloves, crushed
2 tablespoons of Oil
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a container, add the pork crackling along with one cup of water and let it hydrate for 10 minutes.
Step 2 : Then, process or blend until a compact and ground consistency is achieved.
Step 3 : Add the mozzarella, onion, garlic, and chili previously sautéed in oil, along with salt and pepper, mix well, and set aside.
Step 4 : In another bowl, prepare the dough by adding the flour, salt, and the remaining 3 cups of water.
Step 5 : Knead until it is firm, smooth, and does not stick to the hands.
Step 6 : Then, take a portion of dough and form a ball, making a hole in the center.
Step 7 : Add one and a half tablespoons of the pork crackling and cheese filling, remove the excess dough, and shape it oval with your palms.
Step 8 : Place the pupusas on a preheated comal over medium heat and cook until golden brown on both sides.
Step 9 : Repeat the process with the remaining dough.
Step 10 : Finally, serve the hot pupusas accompanied by your preferred salsa.
