Ingredients

1 pound of Wheat flour

1 pound of Whole wheat flour

4 cups of Water

5 tablespoons of Olive oil

2 teaspoons of Baking soda

1 tablespoon of Baking powder

1 pinch of Salt

2 Egg yolks

Preparation

Step 1 : In a large bowl, combine the two flours.

Step 2 : Add the 4 cups of water, the tablespoons of olive oil, and the two egg yolks.

Step 3 : Mix everything very well until the dough becomes soft and flexible.

Step 4 : Cover the bowl and let it rest for at least 25 to 30 minutes.

Step 5 : On an oiled tray (preferably aluminum), start to spread out the dough.

Step 6 : Once spread out, add the pinch of salt and the baking powder over the dough.

Step 7 : Knead the dough to mix well and help the salt and baking powder adhere.

Step 8 : Let it rest for 15 minutes.

Step 9 : After resting, stretch the dough again and add the teaspoons of baking soda.

Step 10 : Knead the dough again, stretching it with your hands.

Step 11 : Let it rest for 15 minutes and grease the tray with oil.

Step 12 : Divide the dough into 7 pieces, cut into squares, and form balls.

Step 13 : Let it rest again for 15 minutes.

Step 14 : Preheat the oven to 230 degrees (Celsius) and place the balls on the tray lined with parchment paper to prevent sticking during stretching.

Step 15 : Optional: Let it rest another 15 minutes before baking to allow the yeast to act on the bread.

Step 16 : After the 15 minutes, bake for 25 minutes, checking that the dough does not crack.

Step 17 : Then turn off the oven and let the molletes cool.

Step 18 : Optional: You can add fried beans and cheese on top of the molletes.
