Honduran-style 'Gringas'
Ingredients

1 kilogram of Boneless chicken breast
12 Flour tortillas
1 Large purple onion
1 Red bell pepper
1 tablespoon of Oil
½ kilogram of Quesillo cheese
1 Chicken broth cube
1 pinch of Salt
Lemon juice
1 pinch of Pepper
Preparation (simple version)
Preparation
Step 1 : Place the chicken in a pot with water and a pinch of salt; cook until fully cooked. Remove and let drain.
Step 2 : Once rested, chop into pieces.
Step 3 : Slice the bell pepper and red onion into julienne strips.
Step 4 : In a hot skillet with oil, sauté the vegetables for 1 minute.
Step 5 : Add the chicken, sprinkle with broth cube, season to taste, and cook until everything is golden. Then, remove from heat.
Step 6 : In another skillet with a bit of oil, place a tortilla, add chicken with vegetables, cheese to taste, a splash of lemon juice, and cover with another tortilla.
Step 7 : After one minute, carefully flip the 'Gringa' and let it brown well.
