Ingredients

1 kilogram of Shrimp

1 Medium white onion

2 Shrimp broth cubes

4 Medium lemons

5 tablespoons of Olive oil

Oregano, cumin, thyme

2 Eggs

1 cup of Coconut

½ cup of Flour

2 Cubitos

1 teaspoon of Baking powder

1 cup of Chopped fresh cilantro

1 Medium tomato

2 Garlic cloves

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Wash and clean the shrimp, then place them in a bowl and season with lemon juice, spices, broth cubes, salt, and pepper.

Step 2 : After mixing well to flavor them, let marinate in the refrigerator for one hour.

Step 3 : In a bowl, add the flour and baking powder, then coat the shrimp with this mixture.

Step 4 : Next, in another container, beat the eggs and dip the shrimp into this mixture. Then grate the coconut and cover the shrimp with the grated coconut, setting aside.

Step 5 : In a skillet, pour the olive oil and add the onion, tomato, and garlic cloves.

Step 6 : Fry the shrimp until they start to turn golden.

Step 7 : Remove from heat and allow to cool.

Step 8 : To serve, place the shrimp on a wide plate and sprinkle with cilantro on top.

Step 9 : They can be served with fried potatoes or enjoyed on their own.
