Chimol is a refreshing and delicious side dish very popular in Honduras. Made with tomato, onion, green chile, and spices, it is perfect to accompany dishes like grilled meat.
Combine tomato, onion, green chile, cilantro, oregano, cumin, salt, olive oil, vinegar, and lime juice. Mix and let sit before serving.

Ingredients
2 Tomatoes
1 Sweet green chile
½ White or yellow onion
1 tablespoon of Cilantro
1 teaspoon of Oregano
1 teaspoon of Cumin
2 teaspoons of Salt
2 tablespoons of Olive oil
1 tablespoon of Vinegar
1 tablespoon of Lime juice
Preparation
Step 1 : To prepare the salad, start by washing the cilantro, tomatoes, green chile, carrot, and cabbage with water, vinegar, and baking soda.
Step 2 : Then, cut the tomatoes, sweet chile, and onion into small pieces and add the chopped cilantro.
Step 3 : Mix all ingredients in a glass or plastic container.
Step 4 : Next, add vinegar, lime juice, oregano, cumin, and salt; if available, add 1 or 2 tablespoons of olive oil.
Step 5 : Stir the mixture well and let it rest for 30 minutes before serving.
