Chilaquiles with Chicken
Ingredients
1 kilogram of Peeled Roma tomatoes
3 Peeled garlic cloves
3 Adobo chipotle chiles
½ kilogram of Cooked chicken meat
1 cup of Cream
Vegetable oil
½ kilogram of Tortillas cut into squares
1 cup of Parmesan cheese
1 cup of Grated queso fresco
2 cups of Refried beans
1 Chicken broth cube
Preparation
Step 1 : To prepare this recipe, start by heating enough oil in a skillet and frying the tortillas until golden, being careful not to burn them.
Step 2 : Then, remove and drain them on a paper towel.
Step 3 : Next, cook the tomatoes in boiling water, then blend them with garlic, cream, chipotle chiles, and salt.
Step 4 : Fry the resulting sauce for 5 minutes and add the shredded chicken, letting it cook for another 5 minutes.
Step 5 : To continue, add the fried tortillas and stir until they are coated with the sauce.
Step 6 : Finally, serve immediately with cream, Parmesan cheese, and queso fresco, and accompany with refried beans.
