Chifrijo is a delicious combination of cooked red beans in their broth, pork crackling, white rice, and fresh pico de gallo.
It is a traditional Costa Rican dish prepared with love and enjoyed in good company.
Chifrijo
Ingredients
2 cups of Cooked red beans
½ cup of Apple juice
1 cup of Chopped onion
1 Chopped red morrón chili
5 Whole garlic cloves
3 Chopped garlic cloves
¼ cup of Oil
½ pound of Pork crackling in pieces
½ pound of Loin pork crackling in pieces
1 Chopped white onion
2 Chopped garlic cloves
1 Chopped red morrón chili
1 cup of White rice
1 ½ cup of Water
1 Lemon
1 Jalapeño slices
1 cup of Cream cheese cubes
3 Cubed avocados
10 Fried corn tortillas in strips
4 Diced tomatoes
2 tablespoons of Finely chopped cilantro
2 Lemons
1 Cubed red onion
1 tablespoon of Olive oil
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a skillet, prepare a sofrito with oil, garlic, onion, and chili morrón, cooking for 10 minutes over low heat.
Step 2 : Then, add the red beans with their broth and apple juice, cooking for 15 minutes and seasoning to taste.
Step 3 : For the pico de gallo, mix all the ingredients and season according to taste.
Step 4 : In a pot, heat vegetable oil for the rice.
Step 5 : Sauté onion, garlic, and chili morrón for 5 minutes, add rice, and cook for 2 minutes.
Step 6 : Subsequently, add water and salt, cooking covered for 10-15 minutes.
Step 7 : To serve, place rice, beans with broth, pork crackling, pico de gallo, and avocado on a plate.
Step 8 : Accompany with tortillas, jalapeños, lemon, and cubes of cream cheese.
