Chicken Chilaquiles
Ingredients
1 kilogram of Tomatoes
3 Peeled garlic cloves
3 Chipotle peppers in adobo
½ kilogram of Cooked chicken meat
1 cup of Cream
Vegetable oil
½ kilogram of Tortillas cut into squares
1 cup of Parmesan cheese
1 cup of Grated quesillo
2 cups of Refried beans
1 Chicken broth cube
Preparation
Step 1 : To prepare this recipe, start by heating enough oil in a skillet and toasting the tortillas, taking care not to burn them.
Step 2 : Then, remove them and drain on a paper towel.
Step 3 : Next, boil the tomatoes in water, then blend them with garlic, cream, chipotle peppers, and salt.
Step 4 : Fry the resulting sauce for 5 minutes and add the shredded chicken, cooking for another 5 minutes.
Step 5 : Continue by incorporating the toasted tortillas and stirring until they are coated with the sauce.
Step 6 : Finally, serve immediately with cream, Parmesan cheese, and grated Quesillo, and accompany with refried beans.
