Caprese Pasta Salad
Ingredients
3 cups of Pre-cooked pasta (fusilli)
1 cup of Cherry tomatoes
1 cup of Diced avocado
1 cup of Cubed mozzarella cheese
½ cup of Basil leaves
½ tablespoon of De-stemmed thyme
Olive oil
2 cups of Balsamic vinegar
¼ cup of Apple nectar
½ cup of White sugar
2 tablespoons of Honey
1 Avocado
1 tablespoon of Cream
1 tablespoon of Skim milk
1 tablespoon of Semi-skimmed milk
1 teaspoon of Ground garlic
½ Lemon juice
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Start by mixing the al dente pre-cooked pasta in a bowl, along with cherry tomatoes, avocado, mozzarella, basil leaves, thyme, and olive oil.
Step 2 : Combine all ingredients and season with salt and pepper to taste.
Step 3 : Prepare the balsamic reduction by cooking it over low heat for 20 to 30 minutes, then let it cool and set aside.
Step 4 : Meanwhile, prepare the dressing in a blender by combining all ingredients and blending until smooth. Season with salt and pepper to taste.
Step 5 : To serve the salad, drizzle with a little olive oil, balsamic reduction, and serve with the dressing.
