These delicious croquettes are very popular in Honduras, prepared simply and quickly.
It is said that this recipe has its roots in home cooking, being a recipe passed down from parents to children for many generations.
Bean Croquettes
Ingredients
2 pounds of Cooked and drained beans
¼ cup of Grated carrot
¼ cup of Cooked corn
½ tablespoon of Onion powder
1 teaspoon of Garlic powder
1 tablespoon of Paprika
1 teaspoon of Ground cumin
1 pinch of Salt
2½ cups of Breadcrumbs
¼ cup of Finely chopped cilantro
½ cup of Liquid milk
Oil for frying
1 pinch of Pepper
Preparation
Step 1 : In a bowl, combine the carrot, corn, onion, garlic, cumin, paprika, salt, and season with salt and pepper.
Step 2 : Pass everything through a food mill until you obtain a dry and soft dough.
Step 3 : Then add the breadcrumbs, cilantro, milk, and knead everything.
Step 4 : Refrigerate for 1 hour.
Step 5 : After refrigeration, remove the mixture from the refrigerator and take small portions with a spoon to make balls.
Step 6 : Roll the balls in breadcrumbs and set aside.
Step 7 : Heat plenty of oil in a pan and fry the croquettes.
Step 8 : Once golden, remove and place on absorbent paper.
Step 9 : Serve the croquettes accompanied by ketchup or the preferred sauce of each person.
