Ingredients
2 ½ cups of Flour
1 cup of Hot water
1 teaspoon of Salt
½ teaspoon of Baking powder
⅓ cup of Vegetable shortening
3 tablespoons of Pork lard
½ teaspoon of Salt
2 cups of Cooked whole beans with some broth
½ Onion
Preparation
Step 1 : To prepare the tortilla, place the dry ingredients on a flat surface and then mix the flour, baking powder, salt, and sugar, forming a volcano-like shape in the center.
Step 2 : In the hollow, add the coconut milk along with the yeast and mix again until obtaining a dough without lumps.
Step 3 : Next, add the vegetable shortening and knead until the mixture is moldable.
Step 4 : Form small balls with the dough and let them rest for 45 minutes to allow them to rise.
Step 5 : Then, make tortillas of the desired size and cook them on a griddle or skillet.
Step 6 : To prepare the beans, finely chop 1/4 of an onion and set aside.
Step 7 : In a pot, pour 3 tablespoons of pork lard and heat.
Step 8 : Add the chopped onion and fry for about 1 minute, stirring regularly until it appears slightly translucent.
Step 9 : Then, add 2 cups of cooked whole beans with some broth and 1/2 teaspoon of salt.
Step 10 : Process the ingredients inside the pot using an immersion blender or a masher until reaching a mashed consistency.
Step 11 : Cook the beans for about 5 more minutes, stirring constantly, until they are somewhat fried and thickened.
Step 12 : Finally, to assemble the tortilla, add the beans and cheese to taste on one of the prepared tortillas.
