Among some stories explaining the origin of Honduras's flagship dish, is the tale about Doña Teresa, an artisanal cook who in the 1960s established a tortilla business at a key train station area.
Before working
She mobilized dozens of workers from the Standard Fruit Company, who would stop by her stand before heading to their jobs.
It is said that Doña Teresa was wounded by gunfire (the reason remains unknown), and due to this incident, anyone wishing to visit her stand inquired where the "baleada" tortillas were.
This dish underwent modifications as bananas were brought to the region, mainly by investors from India and Pakistan.
Their executives brought their own cooks. Once familiar with the tortillas, the cooks changed the recipe for preparing the dough; instead of adding water and butter, they added milk and margarine to the recipe.
A total mystery
This Asian adaptation has remained in the taste buds of the Honduran people to this day.
The true origin of the baleada remains a mystery. However, there is no doubt that it burst onto the scene with an explosion of flavors.
